Recipe: Creamed Kale

This is a fast, easy and delicious side dish that brings together the nutrient powerhouse kale with some good, satiating fats from coconut milk and grass fed butter.  It goes with any meat dish and with it’s rich flavor can stand up to stronger flavors like beef, pork and lamb.  A steakhouse classic!

What You Need

  • 2 TBS grass fed gutter, ghee or coconut oil
  • Small package of cleaned kale.  Or one large bunch, cleaned, de-stemmed and dried
  • 3/4 can of full fat coconut milk
  • 1/8-1/4 tsp allspice
  • Sea salt & pepper to taste

What to Do

  • In a large sauté pan, melt butter at medium low heat
  • Sauté in kale, turning constantly for about 5 minutes til soft
  • Add coconut milk and allspice.  Let simmer for another 5 minutes, stirring frequently
  • Finish with salt and pepper to taste

Serves 2-3
